Step 1
Chop the scallions and ginger into fine pieces. Cut all the mushrooms into 1 cm sized dices. Take a large bowl, mix the fermented bean paste and sweet flour paste in a 2:1 ratio, add a small spoon of water to blend them evenly.

Pour a small amount of oil into the pot, heat it to 50% heat, then adjust to medium heat, add the mushroom dices and stir-fry. When the mushrooms slightly release water, use a spatula to gently push them, and remove the mushroom dices, leaving excess oil in the pot.

Add the chopped scallions and ginger, stir-fry until fragrant, then pour in the well-mixed sauce. When the sauce and oil are evenly mixed, add the previously stir-fried mushroom dices.

Add a few spoons of water, adjust to low heat and simmer slowly. When the soup boils, constantly stir in the same direction with a spatula to prevent scorching. Cook until the sauce thickens, then sprinkle with an appropriate amount of garlic mince.
