Cut the old tofu into thick slices, smash and cut the garlic sprouts into small segments, separate the garlic head and leaf parts, cut the red pepper into small pieces, and cut the ginger into small pieces. Slice the pork and marinate it with salt and cornstarch. Mix cornstarch and flavor enhancer in a small bowl to make a sauce.

Heat oil in a wok, and when the oil is 20% hot, add the tofu slices one by one. Fry the tofu over medium heat until it is golden brown on both sides. To ensure even heating, occasionally shake and tilt the wok.
