1
Step 1
Prepare a fish, cut it open from the back, and make incisions on the back to allow the flavors to penetrate. Cut off the tail if it is too long.

2
Step 2
Place scallions, ginger, and garlic inside the fish belly as shown in the picture.

3
Step 3
Add 3 tablespoons of cooking wine and 3 tablespoons of soy sauce, then add 1 tablespoon of salt. Rub the mixture evenly on both sides of the fish and marinate for more than 30 minutes.

4
Step 4
While the fish is marinating, prepare the vegetables.

5
Step 5
Mix 3 tablespoons of chili powder, 1 tablespoon of Sichuan peppercorn powder, 1 tablespoon of black pepper powder, 2 tablespoons of cumin powder, and 1 tablespoon of salt.

6
Step 6
Apply the mixed seasoning and oil to the fish, preheat the oven to 250 degrees, and bake for 25 minutes.

7
Step 7
Heat a large amount of oil, then add scallions, ginger, garlic, dried chili peppers, Sichuan peppercorns, chili bean paste, and fermented bean paste with chili, and stir-fry until fragrant. Add the vegetables and stir-fry until they are 80% cooked.

8
Step 8
Cover the fish with the stir-fried vegetables and continue to bake in the oven at 250 degrees for 15 minutes.

9
Step 9
Remove from the oven and serve. The flavor of the roasted fish mixed with the spicy and savory flavor of the fermented bean paste is unbeatable.
