Soak the pork ribs in clean water to remove blood, and change the water if it becomes cloudy.

After washing and draining the ribs, add salt, cooking wine, light soy sauce, oyster sauce, and cornstarch, and marinate for more than 6 hours.

Peel and wash the potatoes, and prepare scallions and ginger slices.

Cut the potatoes into irregular chunks, add 2g of salt, and mix well.

Prepare fermented soybeans.

Put the potatoes at the bottom of a bowl, then add the ribs, fermented soybeans, scallions, and ginger slices on top.
