To make this dish, you can use either round eggplant or long eggplant. I used round eggplant.

Wash the round eggplant clean and cut it into roll-cut pieces, put them in a bowl, sprinkle with salt, and marinate to remove excess water.

After the eggplant has released its water, discard the water. The eggplant that has been marinated with salt will not absorb too much oil, making this dish healthier to eat.

Cut the garlic into minced garlic.

Place a wok over the fire, add cooking oil, and the amount of oil should be slightly more than usual.
