- starch ½ tbsp
- scallions 2 stalks

Wash the winter melon clean and cut it into two halves. Use a melon baller to scoop out winter melon balls.

Marinate the scallops with a few drops of white wine, a pinch of salt, and half a tablespoon of starch.

Boil water in a pot, add half a tablespoon of salt, and then put the winter melon balls in when the water is boiling. Blanch for 2 minutes.
