Put 3 tablespoons of oil in the pot, and when the oil is 70% hot, add the chopped scallions and ginger and stir-fry until fragrant (if you don’t like to eat scallions and ginger, you can remove them after the fragrance comes out and leave only the oil with the scallion and ginger flavor). Pour the egg mixture into the pot and use a spatula to break it into your desired size after it has set. Remove and set aside.
