Chop a lot of garlic, a little ginger, and add some chili if you like spicy. Add soy sauce and salt. Mix well with a little cooking wine. If you like a smooth texture, add cornstarch. If you like to chew on meat threads, the above seasonings are enough.

Cover with plastic wrap and refrigerate for a while to let it marinate. If the weather is not cold enough, it’s easy to spoil, so refrigeration is safer. I marinated it after lunch and it was very flavorful by dinner time.

Place it in a steamer basket and steam over high heat for 30 minutes. If there’s less meat on the ribs, you can reduce the time. If the ribs have a lot of thick meat, increase the time accordingly. Place the side with more meat facing down to let the broth soak in.
