Clean the scallops with a toothbrush and open them with a small knife. Remove the meat and take out the internal organs. Soak the scallop meat in a bowl of saltwater for 2-3 minutes, then stir it clockwise with chopsticks to remove the sand. Rinse with clean water.

Sprinkle a small amount of white wine and white pepper powder on the scallop meat and set aside.
