I used oil chicken, which can be a hen, rooster or young chicken, and the taste is pretty good.

Rinse the codonopsis, astragalus, and angelica in cold water and set aside.

To quickly thaw frozen meat, you can use a microwave or soak it in cold salt water. Be careful not to use hot water, as it may produce carcinogens. Since I don’t have a microwave, I soaked the meat in water and cut it into pieces after thawing.

Boil the chicken in water for 3 minutes to remove excess oil and blood, making the soup clearer and healthier.

Put the boiled chicken and ingredients together, adding more water. I used a 1.5L electric rice cooker and added enough water to fill it. Since I was in a hurry, I only simmered it for a little over an hour. If you have more time, you can simmer it longer. Add the red dates 20 minutes before the end and the wolfberries 10 minutes before the end.

The color of the soup is great, and the taste is amazing, with a sweet flavor from the herbs and red dates. It’s very nourishing, and my boyfriend said it smells great.
