1
Step 1
Add pork filling, a moderate amount of salt, thirteen spices, soy sauce, old soy sauce, ginger, scallions, sesame oil, and an egg to the mixture. Mix well until it becomes sticky, similar to making dumpling filling.

2
Step 2
Take a gluten ball from the package, make a small hole in it, and fill it with the meat mixture. Be careful not to break the gluten ball.

3
Step 3
Use chopsticks to fill the gluten ball with the meat mixture, making sure it is full.

4
Step 4
All the gluten balls are now filled with the meat mixture.

5
Step 5
Heat a small amount of oil in a pot, add some scallions, and stir-fry briefly. Then, turn off the heat and arrange the filled gluten balls in the pot.

6
Step 6
Add water to the pot, covering about 2/3 of the gluten balls. Add a small amount of salt, soy sauce, and mushrooms. If desired, add chicken essence (optional). Bring to a boil, then reduce the heat to medium and cook until the liquid is almost gone.

7
Step 7
Garnish with scallions and serve. Adding mushrooms during cooking makes the broth more flavorful and helps reduce greasiness.
