Prepare a 2.2-pound grass carp, which has been killed and cleaned by the fish seller. Bring it home, wash it clean, make a few cuts on both sides of the fish, and rub some salt on it to help it absorb flavors.

Mix corn flour and wheat flour in a 1:1 ratio, add an egg, a little salt, and some water to form a dough. Be careful not to overmix, and make sure the dough is not too hard.

Add some cooking wine and water to cover the fish, and bring to a boil over high heat.
