Put the lamb chops into the pot and blanch them in cold water. Note that cold water must be used to prevent the lamb from becoming tough!

Remove the blanched lamb chops and replace the water with new water and seasonings (except for barbecue sauce, cumin, chili powder, and sesame). Be sure to wait for the water to boil before adding the lamb chops, as sudden temperature changes can make the lamb tough. Cook for about 30 minutes, or until the lamb is 80% cooked.

Preheat the oven to 200 degrees. Remove the cooked lamb chops from the water, drain excess water, and brush a layer of barbecue sauce on the surface. Sprinkle cumin and chili powder to taste.
