To make the hand-grabbing cake, the dough should be softer. Add a small amount of salt to the flour and use boiling water to scald the flour, stirring it into a snowflake shape. After cooling, knead it into a dough and let it rest for a while.

As everyone may not be clear about what scalding the flour means, a picture of the dough used for other filled cakes is added here. The dough is scalded with boiling water and stirred until it reaches this state. As long as it’s not used for making steamed buns, you can use boiling water to mix the flour, and as long as you can knead it into a dough, it’s okay if it’s not very smooth.

After the dough has rested, take an appropriate amount and roll it out into a thin dough skin. The resting time doesn’t need to be very long, about half an hour is enough. After the dough has rested and risen, knead it by hand for a few minutes and then roll it out thinly. When rolling out the dough skin, you can sprinkle a thin layer of dry flour on the board to prevent it from sticking.
