Peel the Chinese yam and cut it into 8cm long strips.

Briefly rinse the bean curd sheets in cold water, then cut them into 6cm wide strips.

Wrap the bean curd sheets around the yam strips, heat oil to 50% heat, coat the wrapped strips with cornstarch and fry until golden brown.

Leave some oil in the wok, add in char siu sauce, dark soy sauce, and sugar, bring to a boil, then add the fried strips and thicken with cornstarch slurry.
