Instructions

Rinse the corn kernels with clean water, remove impurities, and steam them in a steamer until they are 80% cooked. Set aside.

Crack the eggs into a bowl, add flour, cornstarch, water, and lemon juice, and mix into a batter. Then, add the steamed corn kernels to the batter and mix well to form a corn batter.

Take a 35cm diameter pan and place it over medium heat. Add refined oil to the pan and heat it until 70% hot.

When the oil is 70% hot, use a ladle to slowly pour the corn batter into the pan in a circular motion, forming layers, until all the batter is poured.

After pouring the corn batter into the pan, there will be many impurities left in the ladle.

Remove the impurities from the ladle.

During frying, the oil temperature will continue to rise. Add more oil to the pan to control the temperature at medium heat and fry for about 2 minutes, until a honeycomb-like structure forms. Then, switch to high heat and continue frying until the corn fritter turns golden brown and crispy.

Use a spoon to gently press the surface of the corn fritter. If the surface feels hard, it is cooked.

Once the corn fritter is cooked, remove it from the oil with a ladle, drain excess oil, and place it on a plate. Finally, sprinkle powdered sugar and chocolate chips on top.
