Cut the tofu into 2 pieces and soak them in boiling water for a while, then remove and drain the water for later use.

Heat tea oil in a wok, carefully place the tofu in it, and fry one side until it turns golden brown, then flip it over and fry the other side. After frying all sides, remove the tofu and set it aside.

Add fermented bean paste to the remaining oil in the wok and stir-fry until fragrant. Add chili powder and Sichuan pepper powder, and continue stir-frying until the mixture becomes a sauce. Then add a bowl of clear water, bring to a boil, and add the tofu. Turn to high heat to boil, then reduce to low heat and simmer slowly. Try not to flip the tofu during this process, just shake the wok instead.

Reduce the sauce by heating it, taste and adjust the seasoning with salt, then add soy sauce and turn to high heat to reduce the sauce further. Finally, add oyster sauce and carefully tilt the wok, sprinkle with scallions, and serve. If desired, you can also drizzle with a small amount of sesame oil.
