Cut the tofu into small cubes with a thickness not exceeding 1 cm. If it’s too thick, it won’t be cooked through, and if it’s too thin, it may break apart during frying. Slice the five-flower pork and lean pork. Cut the chili into circles, garlic into slices, ginger into shreds, and scallions into oblique segments. Soak the fermented soybeans in water for 2 minutes and rinse them for later use.

Heat a pan (preferably a non-stick pan) and add a small amount of cooking oil. Add the five-flower pork to the pan and stir-fry until the oil is extracted. Add the lean pork to the pan and stir-fry until it changes color.

Remove the five-flower pork from the pan and leave the oil in the pan. If there’s not enough oil, add some more. Heat the oil and add the tofu to fry.
