Korean Potato Ribs Soup

Korean Potato Ribs Soup

This Korean-inspired Pork Rib and Potato Stew is a hearty, spicy, and deeply flavorful dish perfect for warming up any meal. Tender pork ribs are blanched and slow-stewed for hours until fall-off-the-bone tender, then combined with soft potato cubes that soak up the rich, savory broth. The magic lies in the bold, spicy sauce—a mix of Korean chili paste, chili sauce, and chili powder, balanced with garlic, soy sauce, and a touch of sweetness. The result is a robust, umami-packed stew with layers of heat and depth. Just before serving, the stew is finished with silky tofu and fresh chili slices for extra texture and kick. Sizzling hot in a stone pot and paired with steamed rice, this dish is comfort food at its finest—spicy, satisfying, and unforgettable. Perfect for chilly nights or whenever you crave a bowl of bold Korean flavors!
