Cut the chicken into small cubes, then marinate them in Shaoxing wine, cornstarch or egg white for 10 minutes. Blanch the raw peanuts in boiling water for 10 minutes, then remove their skins. Also, cut the potatoes and carrots into small cubes for later use.

Stir-fry the chicken cubes until they are cooked and set aside. Deep-fry the peanuts until they turn golden brown and set aside.

Prepare the sauce by mixing 3 tablespoons of vinegar, 3 tablespoons of sugar, 1 tablespoon of soy sauce, and a small amount of cornstarch. Stir until they are fully dissolved.
