Peel and deseed the winter melon, wash and cut into block-shaped pieces; peel the ginger and cut into slices.

Cut the ham into diced pieces; wash the green beans, blanch in boiling salted water for 30 seconds, then remove and rinse with cold water.

Heat 2 tablespoons of oil in a pot, stir-fry the ginger slices until fragrant, add the diced ham and stir-fry until fragrant, then add the winter melon pieces and 2 bowls of clear water, cover and bring to a boil over high heat, then reduce to low heat and simmer for 15 minutes.

Add the green beans to the pot and stir-fry with the other ingredients, then continue to cook for 5 minutes until the soup thickens.
