Rinse the river shrimp clean, cut off the shrimp guns and shrimp whiskers with scissors (this step can be omitted for river shrimp less than 5cm), and then use kitchen paper towels to absorb the surface water of the river shrimp for later use.

After cleaning the leek, control the water and cut it into sections, and cut the ginger, scallion, and red bell pepper into shreds.

Add more peanut oil to the pan, heat the oil to 70% heat, add the small river shrimp, and fry until the river shrimp changes color and the shell is crispy, then remove and drain the oil.
