Instructions

1. Step 1

Choose relatively tender lotus root, remove the nodes, use a fruit knife to scrape off the outer skin (or use a knife blade to lightly scrape off the surface), slice thinly, and soak in water to wash away excess starch.

2. Step 2

Cut the green and red peppers into small circles, wash and drain the lotus root slices for later use.

3. Step 3

Heat oil in a pot (preferably a stainless steel pot), add the lotus root slices and pepper circles, and stir-fry over high heat.

4. Step 4

After stir-frying out the juice, add soy sauce and continue stir-frying, then add a scoop of bone broth and simmer for a while.

5. Step 5

When the juice is almost dry, switch to high heat, season with salt, and stir-fry evenly with a large scoop of oyster sauce.
