Instructions

1. Step 1

Slice the lotus root and soak it in water for 5-10 minutes. Cut the tenderloin into slices and marinate it with cooking wine, starch, a small amount of soy sauce, and ginger for 10 minutes.

2. Step 2

Heat the oil to 70% heat, then add the marinated meat slices and stir-fry until they change color, then dish out.

3. Step 3

Heat a small amount of oil to 60% heat, add scallion and ginger slices, and a few Sichuan peppercorns, stir-fry until fragrant, then remove them. Add the lotus root slices and stir-fry. When they start to stick to the pan, add a small amount of vinegar and stir-fry a few times, then add the meat slices and stir-fry.
