Instructions

1. Step 1

Wash the eggplant clean and cut it into long strips about the thickness of a thumb.

2. Step 2

Heat a wok, add 2-3 times the amount of vegetable oil for stir-frying, put in the eggplant and stir-fry until golden and soft, drain the oil for later use.

3. Step 3

Heat the wok, add vegetable oil, add scallions and stir-fry until fragrant, add ground pork and stir-fry until it turns white, add dry sauce (1-2 tablespoons), soy sauce (1 tablespoon), sugar (0.5-1 tablespoon), and water (1 stir-fry scoop), mix into a meat sauce.

Add the eggplant and stir-fry to taste.
