Wash the flat beans clean, remove the tendons from both ends, and cut them into segments or coarse threads; cut the potatoes and carrots into small dices; slice the mushrooms; cut the scallions and ginger into slices, and mince the garlic after crushing it; heat the wok with some oil over medium heat until it reaches 70% heat, then add the scallion and ginger slices to stir-fry until fragrant.

Pour in the flat beans, stir-fry for a while, then add the potatoes and mushrooms, stir-fry for 2 minutes, and then pour in clear water, the water level should be enough to cover the flat beans.

After the water boils, scoop out the soup and set it aside; reduce the heat to low, place half of the noodles on top of the flat beans, drizzle with a layer of edible oil, and then place the other half of the noodles on top; note that it is best to use freshly hand-pulled noodles! If not hand-pulled noodles, be sure to use fresh noodles! Pour the reserved soup (divided into 2-3 times) over the noodles, making sure the soup does not overflow the noodles, cover and simmer over low heat for 10 minutes; after the soup is absorbed, sprinkle with garlic mince, and gently stir with chopsticks, finally adjusting with an appropriate amount of salt.

During the simmering process, the noodles need to absorb water, otherwise, the texture will be dry and hard. Therefore, when covering and simmering, observe and add soup in time; when making simmered noodles, be sure to use low heat, otherwise, it is easy to cause the noodles to be undercooked or stick to the pot; the final noodles should be steamed and not boiled.
