Mung Bean Stew Noodles

This Hearty Simmered Noodles with Flat Beans is a comforting one-pot dish bursting with fresh flavors and textures. Tender flat beans, diced potatoes, mushrooms, and carrots are stir-fried with aromatic scallions and ginger, then simmered in a savory broth. The key to perfection? Layering fresh hand-pulled noodles between the veggies and drizzling them with oil for a rich, chewy bite. Slowly steamed in reserved broth, the noodles absorb all the delicious juices, resulting in a moist, flavorful dish. A final sprinkle of garlic adds a fragrant punch, while low-heat cooking ensures perfectly cooked, non-sticky noodles. Ideal for a wholesome family meal, this recipe highlights the natural sweetness of vegetables and the satisfying texture of fresh noodles. Try it for a cozy, restaurant-quality dinner at home!

Step 3
After the water boils, scoop out the soup and set it aside; reduce the heat to low, place half of the noodles on top of the flat beans, drizzle with a layer of edible oil, and then place the other half of the noodles on top; note that it is best to use freshly hand-pulled noodles! If not hand-pulled noodles, be sure to use fresh noodles! Pour the reserved soup (divided into 2-3 times) over the noodles, making sure the soup does not overflow the noodles, cover and simmer over low heat for 10 minutes; after the soup is absorbed, sprinkle with garlic mince, and gently stir with chopsticks, finally adjusting with an appropriate amount of salt.

Step 4
During the simmering process, the noodles need to absorb water, otherwise, the texture will be dry and hard. Therefore, when covering and simmering, observe and add soup in time; when making simmered noodles, be sure to use low heat, otherwise, it is easy to cause the noodles to be undercooked or stick to the pot; the final noodles should be steamed and not boiled.
