Remove the stems from the mushrooms and slice them. Cut the green vegetables into individual pieces. Add water and a pinch of salt to a pot, along with a few drops of oil. Bring the water to a boil, then briefly blanch the mushrooms and green vegetables to remove bitterness and preserve their color. Remove and drain the water.

Slice the garlic, cut the white part of the scallions into segments, cut the dried chili peppers into segments using scissors, and cut the scallion leaves into scallion flowers for later use.

Add a small amount of oil to the pot, then add the sliced garlic, scallion segments, and dried chili peppers to fry until fragrant. (If desired, add some sliced ginger.) First, add the mushroom slices and stir-fry, then add the green vegetables and stir-fry briefly. Add a small amount of salt, pepper powder, and oyster sauce (about one small spoonful), and mix the oyster sauce with a small amount of cool water before slowly adding it to the pot and stir-frying. Once the vegetables are cooked, sprinkle a small amount of chicken essence and stir-fry, then sprinkle with scallion flowers and serve.
