Prepare the ingredients, soak the small mushrooms in warm water, wash and cut the chicken legs into small pieces, and marinate them with cooking wine and a small amount of salt for 20 minutes.

Prepare the seasonings: 4 star anise, 4 cloves, 1 piece of cinnamon, 1 piece of cardamom, a suitable amount of dried tangerine peel, 2 dried chili peppers, a small amount of Sichuan pepper, and a suitable amount of ginger, scallions, and garlic.
