We use Jiangxi rice noodles, which are widely available from various brands and can be used for cold mixing.

After the water boils, add the rice noodles to cook.

After the rice noodles are added to the pot, boil for about 3 minutes, then turn off the heat and simmer for 15-20 minutes until they are fully cooked (do not open the lid during this process).

Immediately rinse with cold water and quickly cool down the rice noodles, then drain the water.

Cut the ginger, garlic, dried chili peppers, and scallions as shown in the picture.

Heat a small amount of oil in the wok, stir-fry the ginger, garlic, and dried chili peppers, add half a bowl of water and chili powder, bring to a boil, then add light soy sauce and dark soy sauce (do not be stingy with the seasonings, add more), add salt (this is for mixing the sauce, so it should be very salty), and finally add the scallions, then turn off the heat.
