This hearty and flavorful cowpea stir-fry combines tender pork, fresh cowpeas, and spicy peppers with soft potatoes for a satisfying meal. The dish starts with stir-frying marbled pork slices until golden, then infusing them with fragrant scallions, ginger, and a rich soy sauce base. Potatoes soak up the savory flavors, while cowpeas add a crisp texture. A key tip: use fresh soy sauce for depth, and adjust saltiness as you go. Simmered to perfection, the hot peppers are added last for a spicy kick. The final reduction thickens the sauce, enhancing every bite. Perfect with rice, this dish balances spice, umami, and comfort in one pan!

1
Step 1
Prepare the ingredients: wash and drain the cowpeas, cut them in half. Wash and drain the hot peppers. Cut the pork or lean meat into thick slices. Cut the scallions into sections and the ginger into slices. Wash and peel 6 small potatoes. If using large potatoes, one is enough, cut it into large pieces.

2
Step 2
Heat oil in a pan, add a little Sichuan pepper powder (optional). Add the meat slices and stir-fry until they change color, then move them to one side. Add the scallion sections and ginger slices, and stir-fry until fragrant.

3
Step 3
Pour in three large spoonfuls of soy sauce. Be sure not to add dark soy sauce. If using seafood soy sauce or extra fresh soy sauce, it would be even better. If you are afraid of the dish being too salty, you can add less at first and add more later.

4
Step 4
Add the potatoes and stir-fry until they are well combined, then add the cowpeas.

5
Step 5
Add water to cover the cowpeas. At this point, taste the dish and adjust the seasoning. It should be slightly saltier than usual. Bring the mixture to a boil over high heat, then reduce the heat to medium and simmer.

6
Step 6
When the cowpeas are soft and cooked, add the hot peppers.

7
Step 7
I usually bury the hot peppers under the cowpeas, so they cook faster.

8
Step 8
When the hot peppers are soft, you can increase the heat to high and reduce the sauce. Be sure to stir-fry constantly to prevent the sauce from burning. If you are in a hurry, you can skip this step and serve the dish directly.
