Cut the pork loin into thick slices of 0.2 cm, marinate with salt and cooking wine to add flavor.

Cut scallions and ginger into strips, cut cilantro into small pieces, mix water starch with a small amount of salad oil to form a paste, and prepare a sauce with vinegar, sugar, light soy sauce, a small amount of salt, chicken essence, and cooking wine.

Heat oil in a pot to 60% heat, adjust the fire to medium, coat the meat slices with the paste, and fry them in the pot until they are cooked and shaped.
