Soak the bird’s nest, soapberry and peach gum in clean water overnight. If it’s hot, it’s best to refrigerate.

After soaking, wash the soapberry, peach gum and bird’s nest, then put them into a double boiler with 2 teaspoons of dried osmanthus, water, and steam for 40 minutes to 1 hour (if you prefer a chewy texture, steam for a shorter time, if you prefer a soft texture, steam for a longer time). Add rock sugar 10 minutes before the end of steaming, and remove from the pot after the rock sugar has completely dissolved.
