Instructions

Wash and dice the fresh shiitake mushrooms, carrots, cucumbers, and sausages, and set them aside.

Heat oil in a wok until it reaches 60% heat, add the diced sausages and stir-fry until fragrant, then add the diced mushrooms and carrots and stir-fry until they are cooked.

Pour in the leftover rice, stir-fry until it is scattered, add salt to taste, then add the diced cucumbers and stir-fry until they are well combined, add oyster sauce and stir-fry for 2 minutes, finally sprinkle with scallions and stir-fry until they are well combined, then turn off the heat and serve.
