Wash 6 lamb chops (about 1 kg) clean, and pat dry the surface with paper towels.

Pour 2 large tablespoons of white wine over the lamb chops, making sure both sides are coated. Marinate for 20 minutes. Note: Traditional French lamb chops do not require this step with white wine, and it can be added according to personal taste.

During the marination process, prepare the sauce. Take 4 cloves of garlic and chop them, then mix with breadcrumbs, thyme, and rosemary in a bowl. Pour in 2 large tablespoons of olive oil and stir well. Set aside. Next, prepare the side dishes.

Wash a medium-sized potato, peel it, and cut it into chunks. Boil them in water for 8 minutes. After 8 minutes, rinse the potatoes with cold water and set aside. Cut asparagus into segments and blanch them in boiling water with a little salt and olive oil for 30 seconds, then set aside.

Wash 10 scallops clean with water and set aside.

After 5 minutes, turn to high heat and reduce the sauce until it thickens, then serve.

Heat a skillet with oil, add the potato chunks and asparagus segments, and stir-fry with half a teaspoon of pepper and half a teaspoon of salt for 2 minutes, until they are slightly sticky, then serve.

To plate, place three lamb chops crosswise on the right lower side of a large plate, then place five scallops on the left upper side. Pour the garlic and onion mixture over the scallops. Place one or two slices of tomato on the right upper side, and top with the stir-fried potatoes and asparagus to complete the dish.
