About This Recipe
This delightful homemade pea cake recipe is a sweet, smooth, and refreshing treat that’s both simple and satisfying. Made with just three key ingredients—agar, peas, and sugar—this dessert combines the natural sweetness of peas with a jelly-like texture from steamed agar for a unique, melt-in-your-mouth experience. The process involves boiling and mashing the peas into a fine paste, then stir-frying them with sugar until rich and thick. The addition of agar ensures a perfect, firm-yet-tender consistency once chilled. After cooling and setting in the refrigerator, the pea cake is sliced into delicate pieces, making it an elegant and light dessert or snack. Its subtly sweet flavor and smooth texture make it a standout dish, perfect for those who enjoy traditional, wholesome sweets. Enjoy this airy, lightly sweetened pea cake as a guilt-free indulgence!

1
Step 1
Rinse the agar and soak it in 250g of clean water, then steam it and set aside.
2
Step 2
Add alkali to the peas and boil them in water until they are cooked, then mash them and remove the skin. Put them in a pot, add sugar, and stir-fry over the fire until it boils, constantly stirring to prevent sticking to the bottom of the pot.

Step 3
When the water has evaporated, pour in the agar and stir-fry for a while to make the pea paste.

Step 4
Pour the fried pea paste into a rectangular plate, cool it (cover with a layer of oil paper to prevent the surface from cracking), and place it in a well-ventilated area. After cooling, refrigerate it and cut it into pieces before serving.
