- scallions 50g (white part)
- bean curd skin 2 pieces (12cm squares)
The sauce & seasonings
- sweet sauce 2 tbsp
- tomato sauce 2 tbsp
- oyster sauce 2 tbsp
- Shaoxing wine 1 tbsp
- egg white 1
- starch 1 tbsp
- salad oil 30ml total
- sesame oil 1 tsp
- old soy sauce 1 tbsp
- sugar 1 tsp

Step 1
Soak the pork loin in water to remove blood, remove the tendons, and cut into strips about 8cm long and 5mm wide.

Peel the ginger and cut into slices; wash the scallions and reserve the white part (about 50g), cut into fine strips after splitting them lengthwise, and place on the bottom of a plate; cut the bean curd skin into squares with a side length of about 12cm, and steam for 8 minutes.

Mix the sweet sauce, tomato sauce, and oyster sauce in a bowl to make the sauce.

Marinate the meat strips with Shaoxing wine and ginger slices for 10 minutes to remove the fishy smell.

Remove the ginger slices from the meat strips, then add salt, starch, egg white, and 10mL of water, and marinate for 20 minutes; finally, add 15mL of salad oil and mix well.

Heat the wok, add salad oil, and quickly stir-fry the marinated meat strips until they turn white, then set aside.
