Clean and wash the chicken, removing its head and tail.

Cut the chicken into small pieces, then marinate them in a mixture of Shaoxing wine, sea salt, bay leaves, star anise, fennel, Sichuan peppercorns, and ginger slices for 15 minutes. After marination, remove the chicken and place it on a plate. Next, steam the chicken in a steamer for about 10 minutes, then simmer for 5 minutes.
