About This Recipe
This tender and flavorful Pig Liver Soup with Greens is a comforting dish that combines rich, savory broth with melt-in-your-mouth pig liver and fresh, vibrant vegetables. The key to its deliciousness lies in blanching the liver first to lock in tenderness, then simmering it in a fragrant broth seasoned with ginger, green onions, and a touch of lard for depth. Baby greens like spinach add a fresh contrast, while a hint of cooking wine and starch ensures the liver stays silky smooth. Quick to prepare yet packed with umami, this nourishing soup is perfect for a light meal or revitalizing boost. The balance of textures and flavors—from the savory chicken essence to the aromatic lard—makes every spoonful irresistible. Try it for a wholesome, restaurant-quality dish at home!

1

Step 1
Wash and clean the small green vegetables and pig liver. Cut some green onion segments and ginger particles.
2

Step 2
Slice the pig liver into pieces and put them into a small bowl.
3

Step 3
Add a small amount of cooking wine to remove the fishy smell, and mix with a small spoon of starch to make the pig liver tender. Be careful not to add too much starch.
4

Step 4
Boil some water in a pot, put the pig liver in and blanch it briefly. Remove it immediately to prevent it from becoming tough.
5

Step 5
Change the water in the pot to about half a bowl. Bring the water to a boil, add half a spoon of salt and a spoon of chicken essence, then put the pig liver in.
6

Step 6
Cook the pig liver for a while, then add the green vegetables and cook until they are tender. Remove the foam from the soup with a spoon.
7

Step 7
Add a spoon of lard and some green onion segments to the soup bowl. Pour the cooked pig liver soup into the bowl and stir well.
8

Step 8
The pig liver soup tastes better with spinach, and the small green vegetables are also delicious.
