Instructions

Prepare all the ingredients as shown: 1 piece of tofu, ginger, garlic, bell pepper, minced meat, and scallions (replaced with leek since scallions were out of stock).

Mince the ginger and garlic, chop the bell pepper into small pieces, and cut the scallions into flower-shaped pieces.

Cut the tofu into 2cm cubic blocks.

Heat a wok or frying pan with cooking oil, add minced ginger and garlic, and stir-fry until fragrant. Then add the minced meat and stir-fry until it turns white.

Add a small amount of salt and half a spoon of pepper powder to the meat, stir-fry evenly, then add enough warm water or broth to cover the tofu blocks, and bring to a boil.

Add the tofu blocks, use a spatula to gently push them, and bring to a boil over high heat. Then reduce the heat to medium and continue cooking, occasionally using the spatula to push the tofu.

When the soup is reduced, add the chopped bell pepper and stir-fry evenly. Then switch to high heat to thicken the sauce.

Taste and adjust the seasoning. If it’s not salty enough, add more salt. Mix water with starch, chicken essence (or monosodium glutamate), and a little pepper powder to thicken the sauce.
