Pork Belly

Pork Belly

This succulent Braised Pork Belly is a melt-in-your-mouth dish that’s packed with rich, savory flavors—perfect for a comforting family meal! The pork belly is expertly prepared by torching off excess hair, sliced thick, and marinated in a luscious blend of sweet bean sauce, soy sauce, and aromatic spices for deep, umami richness. Layered with fresh ginger and scallions, then slow-simmered in a casserole with a secret stewed chicken seasoning, the meat becomes incredibly tender and flavorful. The key to perfection? A low-and-slow cook with a towel-covered lid to lock in moisture, resulting in juicy, fall-apart pork. Serve it chopped over steamed rice with a drizzle of the glossy sauce—it’s a guaranteed hit, especially with kids! This recipe balances sweetness and savoriness for an unforgettable homemade delight.

Instructions

1. Step 1

Step 1
Burn the pig hair on the surface of the pork belly, wash and cut it into 2 cm thick slices. It is recommended to put it in the refrigerator to freeze before cutting, and choose relatively lean meat.

2. Step 2

Step 2
Prepare the marinade! Mix 6 tablespoons of sweet bean sauce, 2 tablespoons of soy sauce, 10 tablespoons of light soy sauce, sugar, and chicken essence in appropriate amounts. Put the meat slices into the marinade for at least 2 hours, then put the meat into a casserole, with a layer of meat, 2 slices of ginger, and some scallions. Pour the remaining marinade into the pot.

3. Step 3

Step 3
Add an appropriate amount of water and a pack of stewed chicken seasoning. Bring to a boil over high heat, then reduce the heat to low and cover the pot with a towel to simmer for 1 hour. Use a small spoon to scrape the bottom of the pot to prevent burning.

4. Step 4

Step 4
Serve, chop the meat into small pieces and mix with rice, add some sauce, this is a favorite dish of my son.
