After blanching the pork ribs, rinse them with cold water to remove the foam and set aside.

Cut the scallions into sections, slice the ginger, and leave the chili peppers and garlic cloves whole.

Heat a large amount of oil in a pot over high heat. Add the aromatics and stir-fry until fragrant, then reduce the heat to medium and add the pork ribs. Stir-fry for about 2 minutes, then add light soy sauce, dark soy sauce, and thirteen spices. Continue stir-frying until the aromas are released.
