Instructions

1. Step 1

Remove the white tendons from the pork loin, slice it into thin pieces, and mix with salt, pepper, cooking wine, and monosodium glutamate. Then, coat the meat with egg white and bean starch.

2. Step 2

Remove the stems from the shiitake mushrooms and slice them into pieces. Slice the yulan slices into pieces. Cut the scallions into sections, slice the ginger and garlic, and cut the pickled chili peppers into slanted pieces. Break the fried dough into 5 cm square or round pieces. Mix soy sauce, pepper, cooking wine, monosodium glutamate, sugar, vinegar, salt, water, and bean starch with broth to make the sauce.

3. Step 3

Heat the wok over the fire, add lard and heat it until it reaches 180°C. Add the meat slices and stir-fry until they are dispersed and cooked, then remove them from the wok.

4. Step 4

Leave some oil in the wok, add the shiitake mushrooms, yulan slices, pickled chili peppers, ginger, garlic, and scallions, and stir-fry briefly. Then add the meat slices and stir-fry until they are mixed well. Add the sauce and peas, stir-fry until the sauce is thickened, then remove from the wok.

5. Step 5

Fry the fried dough in boiling vegetable oil until it turns yellow, then remove it from the oil. Place the fried dough in a bowl, add a small amount of hot oil, and serve it with the stir-fried meat. Immediately pour the meat over the fried dough.
