Cut 1 scallion into segments (for cooking dumplings), and cut another scallion into flower shape; remove the stem of the okra, rub with salt to remove the fuzzy skin, blanch in boiling water for 1 minute, then cut into small segments; cut the chili into small segments; set aside

Cook the dumplings, place them in a bowl, add okra and scallion flowers, set aside

Heat another pot, add pickled vegetables, water, rice wine, soy sauce, and vinegar, bring to a boil
