About This Recipe
This savory pork belly and tofu stir-fry is a flavorful delight, combining tender pork belly, crispy water chestnuts, soft tofu, and hearty broad beans for a perfect texture balance. The pork belly is fried first to render its rich fat, enhancing the dish’s depth, while the tofu and broad beans are lightly pan-fried for extra crispiness. Aromatic fermented soybean paste, Shaoxing wine, and ginger add umami warmth, while dark and light soy sauces bring a delicate saltiness. Simmered to perfection, the ingredients meld into a rich, fragrant sauce that intensifies as it cooks. Quick, hearty, and packed with contrasting textures, this dish is a must-try for lovers of bold, homestyle flavors. Serve it over rice for a satisfying meal!

menu_book Directions
1

Step 1
Cut the pork belly, water chestnut, and tofu into small dice. Prepare some broad beans. Fry the pork belly first, as this process is necessary to bring out the fat and improve the texture.
2

Step 2
Stir-fry until it looks like this, and the aroma fills the air. Since there is no large non-stick pan at home, use a small non-stick pan to lightly fry the tofu dice. If using a non-stick pan, the tofu can be added directly.
3

Step 3
I’m frying the tofu dice to prevent sticking. If it doesn’t stick, skip this step.
4

Step 4
I also lightly fry the broad beans to improve the texture. This is just a suggestion.
5

Step 5
Now, combine all the ingredients. Add the fermented soybean paste, broad beans, water chestnut, tofu, ginger slices, Shaoxing wine, and sugar to the stir-fried pork.
6

Step 6
Add the dark soy sauce and light soy sauce. Don’t add too much soy sauce.
7

Step 7
Add boiling water to cover the ingredients. Cover the lid and bring to a boil over medium heat, then reduce the heat to low and simmer.
8

Step 8
Almost done, increase the heat to medium for the last 5 minutes.
9

Step 9
Done, the flavor will become more intense as it cooks.
