1. Step 1

Cut the beef brisket into large pieces.
2. Step 2

Put the beef brisket into a pot with cold water, bring to a boil, skim off the foam, and remove the beef.

Change to a stew pot, add half a pot of clean water, and put in the beef brisket. Then add cooking wine, bay leaves, star anise, cinnamon, ginger slices, and scallion segments. Bring to a boil over high heat.

After boiling, cover the pot, and stew over low heat for 1 hour.

Cut the radish into large irregular pieces (it’s best to use white radish, but I can only find green radish in my local store, so I’ll make do).

After 1 hour, add the radish pieces, and season with fermented bean paste, stir-fry oil, five-spice powder, and white pepper powder. If it’s not salty enough, add a little salt. Continue to stew for 40 minutes.
7. Step 7

Before serving, drizzle with a few drops of balsamic vinegar, and garnish with coriander.

This dish is perfect for cold winter days, served with steamed rice and radish pieces soaked in the flavorful broth.
