Step 1
Clean the fish.

It’s best to ask the vendor to cut the fish into a format suitable for roasting when purchasing. If not, you can cut it yourself.

Preheat the oven to 200 degrees Celsius for 5 minutes. Apply a small amount of cooking wine to both sides of the fish (about a palm-sized amount).

Place the fish in the oven and roast at 200 degrees Celsius for 30 minutes.

Prepare seasonings and side dishes. Use 2 small garlic cloves, a small amount of ginger, 4 star anise, a small amount of Chinese angelica, a small handful of dried chili peppers, a small handful of Sichuan peppercorns, half a small dish of bean paste, half a small dish of secret sauce (or use Lao Gan Ma), and 1.5 tablespoons of sugar. Also, prepare lotus root slices, potato slices, cucumber, onion, red bell pepper, and green bell pepper according to your taste.

After the fish is roasted, brush a layer of clear oil on it.

Heat a pan with more oil, stir-fry the prepared seasonings and dishes until fragrant, then add half a scoop of soy sauce, a small amount of sugar, and a small amount of monosodium glutamate.
