After processing the bonito, cut it into pieces, marinate with salt and cooking wine for one hour; pat dry the water; prepare a clean small bowl, fill it with starch; heat oil in the wok; coat the bonito with starch, pan-fry over low heat until both sides are yellow.

After frying, remove and set aside.

In the remaining oil in the wok, add ginger, garlic, and scallion whites, and stir-fry over medium heat.

Pour in tomatoes, stir-fry over medium heat, then reduce to low heat until the juice comes out.
