Instructions

1. Step 1

Cut the scallions into 1cm segments and cut the dried chili peppers into segments.

2. Step 2

Cut the potatoes into slices, not too thick or too thin, just medium thickness is fine.

Heat the oil to 60-80% of its boiling point, add the chili peppers and potatoes, stir-fry for about 1 minute, (stir-fry the potatoes until they are golden brown for better flavor), add salt, and stir-fry evenly.

4. Step 4

Finally, pour in the scallions, stir-fry for about half a minute, and then serve.
