Cut the dried tofu into fine threads.

Place the cut dried tofu threads into a bowl, add an appropriate amount of salt and monosodium glutamate. (If the dried tofu contains salt, add less salt. The amount of salt should be adjusted according to your taste after soaking.)

Pour boiling water into the bowl, and soak the dried tofu threads for about 10 minutes. (The water level should be higher than the dried tofu.)

Cut the scallions into fine threads.

Remove the soaked dried tofu, drain the water slightly, place it on a plate, put scallion threads on top, and add a spoonful of soy sauce. Heat two to three spoonfuls of salad oil to 70% heat, pour it over the scallions, and mix well.
