Rinse the green onions and drain well, take the green part and cut into segments.

Pour all the seasonings into a small bowl, mix well and set aside. Pour 1/3 cup of cold oil into the pot, add the onion segments, heat over medium heat and then turn to medium-low heat until the onion segments turn golden brown, add a spoonful of lard (optional).

Pour the seasonings into the pot and bring to a boil, turn off the heat after about 30-45 seconds.

Cook the noodles according to the package instructions, do not overcook, the noodles for scallion oil noodles should be slightly crunchy.
